I adapted Bob Harpers Low Calorie Chicken Salad recipe to my liking last week and really loved it...
4 oz. chicken breast I used a chicken from Costco
1 1/2 T plain fat free greek yogurt I don't really like greek yogurt, which is why I added some mayo which made this so much better.
1 tsp. olive oil mayo (my addition)
A few sugar coated walnuts from Winco
chopped gala apples
chopped green onions
chopped celery
1 tsp red wine vinegar
raisins
salt
pepper
cinnamon (my addition)
I ate this without lettuce, because I was too busy at work to combine everything. But I'm sure it would be just as delicious with lettuce.
MMMM SOUNDS GOOD---minus the onions!! I'll have to try it!!
